Harvesting Saffron
The delicate art of collecting the world's most precious spice
The Art of Harvesting Saffron
Harvesting is the most critical stage in saffron production. Learn the techniques to maximize both yield and quality.
The harvesting process is where the true value of saffron is realized. Each flower contains just three red stigmas, making this one of the most labor-intensive crops in the world. But with proper technique, you can ensure the highest quality product.
Timing is Everything
Harvest in the early morning when flowers are just beginning to open.
Gentle Handling
Use tweezers or your fingertips to carefully remove the stigmas without damaging them.
Proper Drying
Dry stigmas in a warm, dark place to preserve color, flavor, and aroma.

The Harvesting Process
A step-by-step guide to harvesting and processing saffron

1. Flower Collection
Harvest flowers in the early morning when they're just beginning to open. Gently pick the entire flower by hand.

2. Stigma Extraction
Carefully open each flower and remove the three red stigmas using tweezers or your fingertips. Leave the yellow stamens behind.

3. Drying Process
Spread the stigmas in a thin layer on a paper-lined tray in a warm, dark place. Dry for 24-48 hours until they become brittle.

4. Storage
Once completely dry, store saffron threads in an airtight container away from light, heat, and moisture for up to two years.
